Avocado Toast with Poached Eggs

Avocado ToastHello my dear friends! How are the winters treating you? For me they are being truly indulgent, loads of lovely food, great weather, cozy quilts and so on...:) 

In my previous post, I asked you guys to suggest me something to come up with the clicked stuff. Well, luckily what suggestions I got were mostly similar and apparently matched the one that has been going on in my head as well. Now this is a no-brainer, very simple recipe with minimalist ingredients, which are:
  1. 4 slices of bread,
  2. 1 avocado,
  3. 4 eggs,
  4. Few sprigs of coriander (can substitute this with parsley, I like a bit strong flavor)
  5. Lemon juice - 1/2 lemon
  6. Vinegar - 1 tbsp
  7. Oil or butter
  8. Salt & pepper
Method: Have your bread slices buttered and toasted and keep them aside. Take a broad pan filled 3/4th with water, add vinegar and bring it to a simmer. In the mean time, break the eggs carefully in 4 separate bowls. As the water is simmering, pour eggs one-by-one gently in it (not more than four at a time in case you are making more) and let it cook for exact 1 min. Turn off the heat and cover the pan with lid and let it be covered for 5 min. At the same time, take your avocado and mash it in a bowl, season it with salt and pepper, add lemon juice, chopped coriander and spread it on the toasted bread slices. By this time our eggs should be ready to be out of the pan and on the toast. Very carefully with the help of a flat ladle place the poached eggs on the avocado toasts, sprinkle with some extra salt and pepper and have it right on your counter!!! 🙂 I hope you guys like this simple yet filling recipe of poached eggs on avocado toast and would give it a try if you haven't tried it yet.
