Hello everyone! How are you all? I have been super bugged with this hot and humid weather in Tokyo at the moment. Love me some rain, please. Okay, I am not a huge fan of rainy season either,
but times like these force me to want some rain, what are the weather conditions in your area, hot or pleasant?? 🙂
OK! I know, enough of ranting on weather now, let me show you what is latest in our menu today. Well, this one is a very famous recipe from the Indian kitchen, I am sure most of my Indian readers are very well acquainted with this one.
So without wasting any time, let's get started with the ingredients for Bharwa (Stuffed) Bhindi Masala and then I will share the recipe with you all.
Lady finger (Okra), slit lengthwise—500 gm
Coriander powder—2 tbsp
Cumin powder—2 tbsp
Dry mango powder (amchur)—2 tbsp
Turmeric powder—1 tsp
Red chill powder—2 tsp
Salt—as per taste
Oil—about 2-3 tbsp
Clean the lady fingers with a damp cloth and slit them halfway, lengthwise as shown in the picture below.
Mix all the spices together and start filling them in the slits of lady fingers. Keep aside any leftover masala that you may have.
Heat a pan on medium-low heat, once the oil is hot enough add the masala-filled lady fingers and mix them so that the oil is coated evenly on all the lady fingers. Let them cook covered for about 10-15 min, checking in between. When they are about to be done, add any leftover masala if you have, and mix again. Serve hot and have it with some chapatis or poori.
This is a very basic, no-onion/garlic version of this recipe. If you want you can add onion/garlic depending on your liking.
