Hi guys! I hope you had a rocking week, and now even better weekend. Who doesn't love the weekend? We all work 5 days, some of us 6 days, just to wait for the weekend, don't we?
So today I thought I will share something that is as cherished and loved as the weekend. This one is also for the love of Italian food that I have and is a real quick-and-easy recipe that will be done in the blink on eye, well, not literally. 🙂
The ingredients for this antipasto are (makes 10-12 slices):
Fresh ripe tomatoes, chopped—about 4-5
Fresh or dried basil—few sprinkles (I used dried); if you are using fresh few leaves should do, as such there is no right amount, you can use as much or as less depending on your liking.
Garlic cloves, peeled—3-4
Extra virgin olive oil—2 tbsp
Crushed black pepper—for seasoning, as per the taste
Salt—for seasoning, as per the taste
Italian bread or baguette slices—10-12, about half-inch-thick slices
Cut the bread in half-inch-thick slices and toast them in the oven till they are nice and crisp.
Take the chopped tomatoes in a large bowl, add basil, extra virgin olive oil, salt, and black pepper and mix everything.
Take the bread slices out of the oven, rub the peeled garlic cloves on one side of the bread slices and arrange them on a platter. Doing this gives a fresh aroma of garlic to the bread which gives it a rich flavour.
Spread the tomato mixture on all the slices of the bread with the help of a spoon and your bruschetta is ready.
