Homemade Egg Rolls | Super Quick and Easy Breakfast

Hi everyone! I hope you all are having a great week so far! We have a mid-week holiday here in Japan, which resulted in late posting. 😉 I face this challenge almost every weekend when my bed and I are inseparable, only parting ways on the hunger call. In such a situation it becomes a hard task while you are married too, you both wake up hungry, meh! At such time when you can’t apply much brain to decide what to have in brekkie, as you are too hungry, eggs come to rescue in my life. I make something or the other with eggs; they are too quick and you can make a myriad of recipes with them. Today I am sharing egg rolls with you guys, one such super quick and easy breakfast recipe that is a total hit and everybody likes it, I can bet! You need just a few ingredients, which are almost always available:
  1. Eggs—4 (1 per roll)
  2. Mayonnaise
  3. Wheat Floor—~2 cups (made 4 rolls)
  4. Onion, sliced—1
  5. Salt and black pepper as per taste
  6. Vegetable oil—2.5 tbsp.
  7. Aluminum foil

  1. Take a nonstick pan and slightly sauté onion slices in ½ tbsp. oil till they turn translucent and then transfer them in a bowl.
  2. Prepare dough and divide it into 4 equal parts. Now roll these to make a good-sized roti.
  3. Put the same nonstick pan that we used in step 1 on medium high heat.
  4. Spread the rolled out roti on the pan and let it turn very slightly golden brown and then flip and do it on the other side applying oil on both the sides.
  5. Crack an egg and slightly spread it on the roti and then very gently flip the roti. Don't worry if things get messy, it will be all well after flipping.
  6. Move the roti slightly on the pan so that any messy egg yolk can stick back to the roti. Press the roti with a flat spatula, so that it the egg cooks evenly.
  7. Flip once again and cook for a few seconds.
  8. Take it off the pan and transfer on a plate. Add some mayonnaise and spread it with a spatula or butter knife.
  9. Arrange the sautéed onions prepared in step 1 in a row (as shown in the pic above). Season with salt and black pepper and roll.
  10. Wrap one-half in aluminum foil and serve hot. Enjoy with some ketchup or green chutney!
Variations—You can also sauté some veggies like capsicum, beans, etc. along with onions and add them to the egg rolls or you can make the rolls sans egg with these veggies only.
