Fresh Tomato Soup: Winter Delights

Homemade Tomato Soup
  During winters, one thing I like to have most of the times other than tea/coffee is Fresh Tomato Soup. Now, I know this is a very basic and the most popular thing in the category of soups, which almost everyone knows how to make, but still I wanted to share my recipe with you all. Hope you all like it. So here is all you need to serve 2:
  1. Fresh, ripe tomatoes, diced­—4 large
  2. Online, sliced­—1 medium
  3. Cloves­—3-4
  4. Black pepper­—8-10 or as per your liking
  5. Vegetable stock (or water if former is not available) ­—~2 cups
  6. Butter­—2 tbsp.
  7. Salt­—as per taste
  8. Croutons—a handful
  9. Full cream—1 tbsp.

  1. In a deep pan, put all the ingredients (1–5) and bring it to a boil on medium-low for about 15–20 min.
  2. Once everything looks well blended and tender, turn off the heat and let cool for a while and then transfer the contents into a mixer and pulse for half a minute. (You can also use a hand blender; I don’t have it with me at the moment).
  3. Heat the same pan again and add 1 tbsp. butter followed by the tomato mixture that we blended in step 2. Let it simmer for a minute or two followed by remaining 1 tbsp. butter.
  4. Season it with salt as per taste. Serve it with some croutons on top and garnish with some full cream. Enjoy hot! I also sprinkled some oregano, totally optional. 🙂

  • I like tomato soup but thanks to Manya we are now into all kinds of vegetable soups – to get her to relish all kinds of veggies – in the winters i use chicken broth/stock instead of vegetable for added warmth 🙂

    • I do make other soups too but this is my all time favourite. I have never tried using chicken broth being a vegetarian myself, but I might try that soon 🙂 xx
