Masala Oats
Today I am going to share masala oats recipe with you all. It is a healthy and quick recipe that you cannot afford to miss, it has all the perks of a perfect breakfast, it's full of flavours, it's healthy, it's quick, and it's easy, what else you want? Plus, it also does not need that extra bit of roasting or the like step. Masala oats is my preferred breakfast when I am in hurry, read lazy, as I generally prefer having milk separately in my breakfast instead of adding something into it, so the option of soaked or overnight oats is mostly only at times when I crave for that, also my preference is savoury over sweet, hence. Let's start with the ingredients (serves 1):
  • Oats (I used instant ones)—1 and 1/2 cups
  • Onion, chopped—1
  • Tomato, chopped—1/2
  • Green chillies, finely chopped—1 or 2 depending on your taste
  • French beans, chopped to inch size—1/2 cup
  • Corn kernels—1/4 cup
  • Shredded coconut— 2 tbsp
  • Salt and pepper—as per taste
  • Turmeric—a pinch
  • Water—2 cups
  • Roasted peanuts— 1/2 cup
  • Cooking oil—2 tbsp
  • Black mustard seeds—1 tsp
  • You can add any other veggies of your choice as well.
Method: Heat a flat-bottomed pan on medium heat and add oil followed by mustard seeds. As soon as they start to splutter, add green chillies and onion (spare some for garnishing while serving, if you like) and sauté till onion is golden brown. Now add french beans and any other veggies if you must, add turmeric and mix everything and let it cook partly for 2-3 mins. Add tomatoes, mix and let it cook till tomatoes look cooked (roughly 2 mins.). Add water and let it boil. When water starts boiling, add oats, mix everything and let it cook covered till all the water is absorbed by oats and it almost doubles up in volume. Add shredded coconut and mix. Season with salt and pepper and roasted peanuts and serve with some raw onion on top, if you like but make sure it's little or else it might not be very pleasing for your colleagues. :p I hope you liked this quick and easy healthy breakfast recipe.
